Ingredients
- 150 g Vital wheat gluten
- 30 g Chickpea flour
- 1 tsp Smoked paprika
- 2 tbsp Soy sauce
- 2 Garlic
- 120 ml Vegetable stock
- 1 L Vegetable stock
Contains: Celery, Cereals containing gluten, Soybeans. Always check the labels of what you buy.
Method
- Mix the vital wheat gluten, chickpea flour and smoked paprika in a bowl.
- Crush the garlic and stir it into the 120 ml of stock with the soy sauce. Pour into the dry mix and stir until it forms a dough.
- Knead for 3 minutes until springy and elastic, then shape into a log and cut into 4 pieces.
- Bring the 1 litre of stock to a bare simmer in a large pan, add the seitan and simmer very gently, partly covered, for 45 minutes. Don't let it boil hard or the seitan turns spongy.
- Leave to cool in the stock, then slice or tear as needed. Keeps 5 days in the fridge in its stock, or freeze.
